This was a normal week, one of the most normal I've had in awhile, but I still went a little off the road with some of my goals. I spent a lot of time gardening this weekend. Like, a LOT of time gardening this weekend. I have 4 garden spaces started, and I am really happy with how they are looking. Gardening, or planting rather, gives me a lot of joy, so I guess I don't feel all that bad that this ended up my focus in this week rather than some of the goals. Maintenance of the gardens, that will be a different story. Love the planting, the upkeep, not so much. So, I didn't walk the dogs that much this weekend. It was very hot, so Circe wouldn't have wanted to walk too much anyway. But I need to do a lot better with this for myself. It should have been a new recipe weekend, but my guest never really committed, and then ended up saying no anyway. I bought the ingredients, and hopefully next weekend will work out. This was a new recipe weekend. It was definitely one of my less visually appealing attempts. It tasted ok, but it could definitely be better. I made Tex-Mex Calzones: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=653363. I couldn't find thin pizza crust, and I think it was really important to have thin crust. The thick crust kind of took over so the flavors of the meat and cheese didn't come through enough. I think the filling needed more color - the salsa verde probably added some flavor, but the color just blended into the meat. I think if I try this again, I will use a regular salsa along with the salsa verde. I might also add some cream cheese or sour cream to the mixture too. Part of the point of the new recipe day is to have some less successful attempts. If all of them turn out great, there is no risk. So this was part of the package. This week was another week that was a tough one for my goals. I went off the road on a lot of them, and some of them that I had been very much on track, like walking, writing and new recipes. It was a hard week in other ways, too. One of my college professors from St. Mary's passed away this week. Doc Peake was a very talented and gifted teacher and director, and I learned a lot from him and enjoyed working with him so much. Hearing about his death hit me hard, harder than I would have expected. I loved my years at St. Mary's, and I love the people I met there and worked with. Losing any of them is like losing a little a piece of some of the best years of my life. Doc Peake will be greatly missed. Rest in peace. But on to my goals...
